Winning sweet rolls made with basic dough

Emmet County's 4-H demonstration winners, Marlis and Mavis Tirevold of the Ellsworth Go-Getters club share their sweet roll recipe this week. Their demonstration was on variations to be made with this basic sweet dough.

Basic Sweet Dough

Scald two cups milk. Add cup butter and 1 cup sugar. Stir. Dissolve 2 pkgs. Dry yeast in cup lukewarm water. Add to cooled milk. Add 2 eggs beaten and 2 teaspoons salt. Stir in 8 or 9 cups flour. Turn on floured board and knead until smooth and little bubbles can be seen beneath the surface of the dough. Let rise until double in bulk, punch down, and allow to rise again until double. Shape.

Cinnamon Rolls

Roll 1-3 of dough to a inch thickness in shape of a rectangle. Spread softened butter over the dough and sprinkle with brown sugar and cinnamon. Roll like a jelly roll; seal sides and ends. Cut into 2-inch slices and place, cut sides up, on greased baking sheet. Cover; let rise until double. Bake 20 min. at 350 degrees. Makes 12 rolls.

Caramel Rolls

Prepare as for cinnamon rolls. Bake in a cake pan containing a mixture of equal portions of brown sugar and white syrup and half as much butter. Let rise until double and bake as for cinnamon rolls.

Swedish Tea Ring

Prepare as for cinnamon rolls but do not cut into slices. Arrange in a circle on a cookie sheet. Snip across the roll at 1-inch intervals about 2-3 of the way through the roll. Twist each piece so cut side is up. Let rise until doubled. Bake 30 minutes at 350 degrees. Frost with a powdered sugar frosting and decorate with nuts or maraschino cherries.

Christmas Bread

Add mixed fruit to the dough. Roll into a rectangle about 8 x 18. Place on a cookie sheet, cut into 3 strips and braid. Let rise and bake as Swedish Tea Ring. Frost and decorate with red and green maraschino cherries.
